Hovezi Guláš Recipe - Pavel Jareš


You asked me for the goulash recipe. There are many variants of the meal cooked in our country. You can find Segedin (Segedínsky guláš - Pork in a delicate sauce containing sauerkraut and a little half-and-half), Jeleni (venison), Kanci (wild boar), Veprovy (pork), Chaluparsky (cottage), Fazolovy (beans), Hospodský (innkeeper), Kruti (turkey), Jarni  (spring) and so on. But the best one is Hovezi (beef) goulash.

 Recipe of beef goulash:
500g (abt. 1 lb.) beef meat (some prefer shin – aka. shank from the lower front leg), flour (fine, smooth), cumin, marjoram, salt, milled pepper, ground sweet pepper (cayenne pepper- not so hot – probably should be paprika), 100g (1 medium) onion, 3 cloves of garlic, fat

Fry the finely chopped onion on hot fat in a pot. It should be goldish; not dark brown nor black. Add chopped meat, pieces should be the same size, let’s say 2x2x2cm (3/4 in. cubes), and fry to pink. Add all spices - quantity depends on, what taste you prefer. Add water and stew it slowly. If there is a need, add water. It takes quite a long time until the meat is soft (depends on meat). To have it thicker add several spoons of flower and boil another 10 minutes.   At the end, flavor with garlic. Serve with dumplings, rice, pasta or bread. It sounds easy but you have to try it several times to know how much, how long, what kind of beef, etc.

Cream sauce (gravy) with dumplings and beef is eaten very often in Czech. It is a traditional food and meal is usually very tasty and filling. There are many kinds of this sauce too. Thick cream is always basic. Mainly women are careful of a meal like this. They put on weight easy and quickly if they eat too much of it. Men too, but they don’t care too much.

How are plum dumplings cooked? There is dough prepared from boiled potatoes and flour. Whole plums are wrapped in the dough. The dumplings are boiled in hot water about ten minutes. They must not be over boiled. On a plate they are powdered by grated cottage cheese (it is called hard, I don’t know if you have it in the USA), with powdered sugar and they are buttered at the end. It is really tasty.
